Happy New Year!

2025 is starting with its share of struggles.  God is good and we will get through this together as a family.

Watching my momma get settled into a nursing home has been rough on us, but it has been devastating for my dad.  It breaks my daddy’s heart to not be able to take her home and care for her.  His love and dedication to care for her has been one of the most beautiful examples of love I have ever seen.  I hate to see him hurt and struggle, but having the privilege of a front-row seat to this level of love is so beautiful and a complete honor to witness as their daughter.  ❤️

Through these last couple weeks, our health focus has been on the bottom of the priority list.  I am amazed at how fast my health declines when I am not focused.  This is just the confirmation of how broken and insulin resistant my body still is.  But I have to remind myself that I didn’t get unhealthy over night, I am not going to get well over night.  Another reminder of this being a lifestyle that will last a lifetime.  This is not a quick fix, or diet, it is for sure a lifestyle.

Tonight will be our last “off track meal”.  My daddy has requested homemade spaghetti and meat sauce.  And this is exactly what I am going to make. He hasn’t had a good home cooked meal in months and I fully intend on sharing this moment with him.  So spaghetti and meat sauce it is.  Complete with garlic toast and salad.  Watching my daddy go back for “seconds”, is a blessing to my soul.  This is also the first meal my daddy has had around my table in over 12 years.  God is good, and I am blessed beyond measure.

After this meal tonight, we are back on our consistently ketovore plan.  I am so happy to say, my dad is actually interested and ready to take baby steps in joining us.  He may not understand the chemistry yet, but just him having an open mind is a step in the right direction.

Once we indulged in our “last supper” spaghetti dinner, we all checked our glucose just for fun.  One hour later my glucose was 123 !!!!!!  High Score WINS…RIGHT?!?!  WRONG!!!!!!!

I am so ready to shoot some cleanup and get back to what I do best!!! Tomorrow morning is a trip to our local butcher for some fresh pork belly, a few ribeyes, a roast and some burger to get us through the next week.  I can’t wait!!!

Feeling inflamed and bloated is not fun.  I know how to control this and reverse it.  When you know what feeling good, feels like, it makes this transition easy.
